I've done slow cooker lamb shanks before but never thought about adding that instant espresso bit, which makes total sense for amplifying the umami without making it taste like coffee. Curious if the onions caramelizing to brownish before deglazing actually changes the final texture or if its mostly about concentratiing flavor.
I feel like it's good for me to eat meat. I feel like factory farming is wrong, in a way that just killing animals is not, but the fact that it allows a lot of people to eat meat is good. Lamb is much more likely to be pastured & less likely to be factory farmsed than other meat, so that's a great thing about lamb. doubt that either of us will change each other’s minds about this
I doubt we'll change each others minds too 😅 it is interesting that you feel better when you eat it, have you done any experimentation with a high protein diet from plant sources, to see if it's meat specifically or protein generally that makes you feel good? I've heard certain amino acids can have impacts on mood, that makes me wonder if they're less common in plant sources 🤔 But I just remember that from a video of Andres at qri talking about it as a tentative thing that might be true, so that's pure speculation on my part. But, feel free to not respond, I'm not really looking to get into a deep dive on it.

When I've been in a low animal consumption phase, i've tried eating lots of protein. Even when I'm supplementing like heme iron and collagen, I don't feel as good
I appreciate it! I think farmkind is one, but I'm not very familiar with that space. I'm only pretty recently going from a hardline perspective of "veganism is the moral baseline" to one that, well, I still think that's true, but I'd rather get as many people on our side as possible even if they're not vegan.
I hope we can develop cheap lab grown meat soon! It would be awesome if that could fill all your needs. I'm super excited for it myself, before going vegan bbq was easily my favorite and juicy marbles is the only brand that gets close, and it still has a long ways to go
it might be worth it for me to say that the quality improvement of eating meat, for me, Is not just in its momentary deliciousness. I’ve gone through periods of eating much less meat and much more meat, and I feel better in basically every way & every moment when I’m eating a fair bit of meat. I’m especially grateful that I had more, and more consistent access to, meat when I was a teenager than almost any woman in history or prehistory.

you probably don't have to caramelize all the way, but I definitely wouldn't put them in raw (something that works in lighter soups)
